These are all great choices. Don’t forget a comfortable strap. You can search for Canon related information on this site.
The Canon 1D Mark III remains a favorite in spite of its 10.1MP resolution—great image quality in a 1.3X sensor.

Tilt/shift lenses for superior depth of field Permalink
Tilt shift lenses allow near infinite depth of field with cooperative (planar) subjects, something simply not possible with any other type of lens. Tilt/shift lenses of many focal lengths and brands are reviewed in DAP, including a discussion of how to use tilt for creative imaging. The shift capability can be used to correct perspective, or for stitching higher resolution composite images.
Top lenses for Canon Permalink
Nikon lenses on Canon: most Nikon lenses can be used on Canon EOS with an adapter (any non-“G” lens). That means Canon shooters can use the entire Zeiss ZF line (see Nikon Gear page), the Hartblei tilt/shift line and an enormous number of older Nikon lenses. Leica R lenses can also be used with an adapter, including the world-class APO lenses.
Outstanding prime lenses
Canon is unique in offering a line of exceptionally fast prime lenses that puts Nikon to shame.

Sharp as nails, awesome bokeh!
Fastest 85mm in existence.
Canon zooms
Canon “L” zoom lenses are highly regarded, but generally do not equal the best prime lenses in their zoom range. Choose a zoom when you need a zoom. For example, the 24/1.4L II is a superior performer compared to the 16-35/2.8L II.

Excellent wide-angle zoom!
Bettered only by the Nikon 14-24/2.8G.

Wide range zoom with fluorite elements!
Some corner weakness, bad ergonomics.
Canon super-teles
All of the super-teles are excellent. The 200/2 and the 300/2.8 can be used for general purpose photography (still viable for all around shooting). The other super-teles are superb, but very big and heavy, limiting their utility (“car lenses”).

Lens adapters for Canon EOS Permalink
The wonderful thing about Canon EOS is that its flange focal distance allows Nikon, Leica R, Olympus OM lenses to be used. Nikon users have no such option, though Leica R lenses can be converted via Leitax.
I strongly recommend one adapter per lens you intend to use; swapping it constantly in the field is a huge hassle.
Stephen Gandy’s CameraQuest is a great choice. I have 10 or o CameraQuest lens adapters for Nikon and Leica and Olympus lenses. While the CameraQuest online store is rudimentary, the products are not; quality of the CameraQuest adapters is excellent.
The Novoflex adapters sold by B&H are also good, but a lot more expensive than CameraQuest. They also have a tendency to be difficult to remove. However, the one I tried offered a slightly tighter fit on my Leica 280/4 APO, which matters with a heavy camera.
