The menus are not necessarily in camera order, since camera order is a scatterbrained mess in terms of what one needs for shooting in the field.

Image quality

Raw is the only thing your author shoots. JPEG is actually more challenging to do well on the camera: it requires constant attention to white balance for best results, since it gets baked in. Better to shoot the image without baking in problems (raw); one less thing to worry about while shooting.
